<p>Job Title: Director of Food & Nutrition Services Effective Date: 11/28/2016</p> <p>Department: Food & Nutrition Services</p> <p>Supervised By: Executive Director Supervises: Food & Nutrition</p> <p>Services Staff</p> <p>General Description</p> <p>Under the direction of the Executive Director, directs operation of the Food & Nutrition</p> <p>Services Department, directs and develops food service employees' performance skills</p> <p>and serves as member of the patient care team. Demonstrates thorough knowledge of</p> <p>Food & Nutrition Services Department jobs and assists when necessary to assure smooth</p> <p>operation. If required, assumes responsibility for some cooking shifts depending on</p> <p>Facility size or labor availability.</p> <p>Essential Duties</p> <ol> <li>Verifies menu is served as written, including adherence to recipes, correct portion </li></ol> <p>sizes, and therapeutic diets.</p> <ol start="2"> <li>Validates proper methods of food preparation are utilized to preserve nutrient </li></ol> <p>content.</p> <ol start="3"> <li>Supervises food production, serving correct food to patients, and controlling </li></ol> <p>appearance, temperature, portion sizing, and sanitation.</p> <ol start="4"> <li> <p>Purchases food and supplies within approved budgets.</p> </li><li> <p>Instructs employees in use, care, and maintenance of equipment, housekeeping,</p> </li></ol> <p>and safety standards. Provides follow through on proper cleaning and</p> <p>maintenance programs.</p> <ol start="6"> <li> <p>Makes meal rounds and verifies that new admissions are visited.</p> </li><li> <p>Participates in regularly scheduled patient care conferences and follows through</p> </li></ol> <p>on patient residents needs.</p> <ol start="8"> <li>Demonstrates thorough knowledge of Food & Nutrition Services Department jobs </li></ol> <p>and assists when necessary to promote smooth operation.</p> <ol start="9"> <li>May need to assume responsibility for some cooking shifts depending on Facility </li></ol> <p>size or available labor.</p> <ol start="10"> <li>Monitors weekly costs associated with the Food & Nutrition Services Department </li></ol> <p>and maintains accurate records / invoicing in order to report month end cost</p> <p>statistics and monitor year-to-date expenses.</p> <ol start="11"> <li>Completes nutritional history for new admissions, visits new residents for diet </li></ol> <p>history, reviews medical record for pertinent nutritional information, records</p> <p>necessary information, notifies kitchen of likes / dislikes, beverage preference,</p> <p>and food allergies, and diabetic meal pattern, if needed.</p> <ol start="12"> <li>Completes discharge summaries for resident who are discharged to another </li></ol> <p>Facility or home</p> <p>HISTORY:</p> <p>(A) 8/2012</p> <p>(B) 11/2016</p> <ol start="13"> <li> <p>Participates in QIP.</p> </li><li> <p>Participates as assigned in the orientation of new staff and demonstrates a</p> </li></ol> <p>positive, helpful, and enthusiastic attitude.</p> <p>Standard Requirements</p> <ol> <li> <p>Supports the Mission, Values and Vision of the Facility.</p> </li><li> <p>Is knowledgeable of resident rights and supports an atmosphere which allows for</p> </li></ol> <p>the privacy, dignity and well-being of all residents in a safe, secure environment.</p> <ol start="3"> <li>Supports, cooperates with, and implements specific procedures and programs for: </li></ol> <p>OSHA and safety, including standard precautions and safe work practices,</p> <p>established fire/safety/disaster plans, risk management, and security, report and/or</p> <p>correct unsafe working conditions, equipment repair and maintenance needs.</p> <ol start="4"> <li>Adheres to: </li></ol> <p>a. Confidentiality of all data, including resident, employee and operations</p> <p>data.</p> <p>b. HIPAA regulations</p> <p>c. Quality Assurance requirements and compliance with regulatory</p> <p>requirements.</p> <p>d. Compliance with current law and policy to provide a work environment</p> <p>free from sexual harassment and illegal and discriminatory behavior.</p> <p>e. Code of Conduct and Compliance Plan when performing work functions.</p> <ol start="5"> <li>Supports and participates in common teamwork: </li></ol> <p>a. Cooperates and works together with all co-workers; plans and completes</p> <p>job duties with minimal supervisory direction, including appropriate</p> <p>judgment.</p> <p>b. Uses tactful, appropriate communications in sensitive and emotional</p> <p>situations.</p> <p>c. Follows up as appropriate with supervisor, co-workers or residents</p> <p>regarding reported complaints, problems and concerns.</p> <p>d. Promotes positive public relations with residents, family members and</p> <p>guests.</p> <p>e. Completes requirements for in-service training, acceptable attendance,</p> <p>uniform and dress codes including personal hygiene, and other work</p> <p>duties as assigned.</p> <p>f. Participates as assigned in the orientation of new staff and demonstrates a</p> <p>positive, helpful, and enthusiastic attitude.</p> <ol start="6"> <li>Immediately reports incidents of alleged resident abuse or neglect or alleged </li></ol> <p>violations of residents' rights to Supervisor or Executive Director.</p> <ol start="7"> <li>Maintains current practice standards or changes by participating in educational </li></ol> <p>opportunities provided by the Facility and outside resources.</p> <p>HISTORY:</p> <p>(A) 8/2012</p> <p>(B) 11/2016</p> <p>Other Duties</p> <p>Perform tasks which are supportive in nature to the essential functions of the job, but</p> <p>which may be altered or redesigned depending upon individual circumstances. Performs</p> <p>other work duties as assigned.</p> <p>Qualifications</p> <p>Education/Training/Experience:</p> <p>If a qualified dietician or other clinically qualified nutrition professional is not employed</p> <p>full-time, the facility must designate a person to serve as the Director of Food and</p> <p>Nutrition Services who -</p> <p>i. For designations prior to November 28, 2016, meets the following requirements</p> <p>no later than 5 years after November 28, 2016, or no later than 1 year after</p> <p>November 28, 2016 for designations after November 28, 2016, is</p> <p>A. A certified dietary manager, or</p> <p>B. A certified food service manager, or</p> <p>C. Has similar national certification for food service management and safety</p> <p>from a national certifying body; or</p> <p>D. Has an associate's or higher degree in food service management or in</p> <p>hospitality, if the course of study includes food service or restaurant</p> <p>management, from an accredited institution of higher learning; and</p> <p>ii. In states that have established standards for food service managers or dietary</p> <p>managers, meets State requirements for food service managers or dietary</p> <p>managers, and</p> <p>iii. Receives frequently scheduled consultations from a qualified dietician or other</p> <p>clinically qualified nutrition professional.</p> <p>A.D.A ((Americans with Disabilities Act)(as amended)) REQUIREMENTS: Must be</p> <p>able to bend, stoop, push, pull, and walk and stand for most of the working day. Requires</p> <p>manual dexterity sufficient to operate standard office machines such as fax, telephone,</p> <p>etc. Requires normal range of hearing and vision. Must be free from communicable</p> <p>diseases that pose a "direct threat" to the health or safety of others and which cannot be</p> <p>eliminated by a reasonable accommodation. Must be able to lift a minimum of 50</p> <p>pounds, and be able to carry and transport supplies. Must be able to pass a post-offer, preemployment</p> <p>physical health examination as a condition of employment. Must be capable</p> <p>of performing the essential functions of the job, with or without reasonable</p> <p>accommodation(s).</p> <p>Skill(s): Must possess proficient reading, writing, grammar, and mathematics skills;</p> <p>proficient interpersonal relations and communication skills; decision-making skills, basic</p> <p>computer skills; and be able to operate various medical and/or office equipment. Must</p> <p>demonstrate knowledge of safety techniques.
