<p>Overview</p> <p>POSITION SUMMARY:</p> <p>Under the direction of the Outlet Chef, the incumbent requisitions and orders necessary quantities of meats, poultry and fish to service all food outlets.</p> <p>Responsibilities</p> <p>ESSENTIAL FUNCTIONS:</p> <p>(These functions are intended as a general illustration of the work performed in this job classification and are not all inclusive for this position)</p> <ul> <li>Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures. </li><li>Carefully surveys menus and, in conjunction with the Chef and Sous Chef, compiles a list of meat, fish and fowl as required. </li><li>Prepares fish, poultry, and meat in accordance with established standards set by the head butcher. </li><li>Sees to the proper rotation, storage temperature and environment required. </li><li>Strives to eliminate over-production and over-purchasing. </li><li>Maintains quality inventory control of all fish, poultry, and meat items. </li><li>Ensures all food items are butchered in accordance with established standards in respect to preparation, storage, and accountability. </li><li>Ensures that the butcher shop and storage areas are maintained in accordance with city and state health department codes. </li><li>Perform other duties as assigned. </li></ul> <p>NON-ESSENTIAL JOB FUNCTIONS</p> <ul> <li>Attend seminars when needed. </li></ul> <p>KNOWLEDGE OF:</p> <ul> <li>All Hard Rock Casino Rockford policies and procedures. </li></ul> <p>ABILITY TO:</p> <ul> <li>Must be able to push, pull and lift 10-50 lbs. and bend, stoop and reach on a limited basis. </li><li>Be flexible to work varying shifts and time schedules as needed. </li><li>Frequently stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. </li><li>Frequently lift and/or move up to 50 pounds and bend, stoop and reach on a limited basis. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus. </li><li>Work in a hectic, fast-paced, and often crowded and noisy environment.
