<p>Washington Unified School District - W.Sac</p> <p>WASHINGTON UNIFIED SCHOOL DISTRICT CLASSIFICATION: COOK MANAGER II SALARY RANGE: 35 GROUP: FOOD SERVICE DATE OF ADOPTION/REVISION: 01/22/09 DESCRIPTION: Under general supervision, to plan, organize and supervise the activities of a cafeteria that prepares meals for three or more programs providing extended service to other locations, combo meals, and other multiple entrées, and snack bar operations. Oversees food preparation and cooks meals in large quantities for various school sites and/or satellite locations. Maintains inventory of food and supplies, determines quantity of food required and makes appropriate orders. Maintains food service records in compliance with State and Federal requirements: and to do related work as required. Employees in this classification supervise and train various cafeteria personnel and student assistants as well as maintaining a positive relationship with staff, students, and parents. JOB CHARACTERISTICS: This position represents an increased level of supervision over a cafeteria site that serves three or more programs at multiple locations, snack bars and a daily variety of planned menus, recipes and increased numbers of students. While many of the day-to-day activities are the same as the Cafeteria Manager, incumbents at this level require additional background to integrate service to other sites and supervise a larger food service staff at a high school, junior high or off site location. Employees in this position operate with a high degree of independence. EXAMPLES OF DUTIES: Plans, organizes and supervises the operation of a school cafeteria including a fast-food service line when offered as part of the school food service program; plans, assigns, supervises and performs work in the preparation and serving of meals to students and staff; may delegate or assist in preparation of main dishes, salads, sandwiches, desserts and baked goods; estimates needed quantities, orders, receives and checks foodstuffs and supplies; maintains standards of efficiency and sanitation in food preparation; prepares the menu production worksheets and all transport paperwork; insures proper storage of food supplies; takes periodic inventory of stock; supervises and personally performs cleaning of kitchen, kitchen equipment and eating utensils; outlines daily duties and work schedule of assigned staff; provides orientation to new staff; arranges for proper maintenance of kitchen equipment; submits end of month meal summaries as prepared by the Cafeteria Cashier or Cafeteria Assistant; may count daily receipts and make bank deposits; maintains a variety of records; may supervise student assistants; attends District meetings and/or in-service workshops, and works on a computer. Prepares food for catering, in-services, and special functions. SPECIAL REQUIREMENTS: - Possession of an appropriate California operator's license issued by the State Department of Motor Vehicles. - Current certificate from an approved safety and sanitation or HACCP course. - Possess Serve Safe Certification, if necessary QUALIFICATIONS: Knowledge of: - Thorough knowledge of institutional quantity food preparation principles, methods, procedures and service; - Considerable knowledge of catering, business record keeping, nutrition and kitchen sanitation; - Tray lunch and/or fast food preparation; - Problems involved in managing a cafeteria; - Care and use of standard kitchen equipment and utensils; - Safe work practices; - Sufficient human relations' skill to communicate specific information and to achieve a harmonious work setting. AND Ability to: - Perform all the essential duties of the position under general guidance; - Demonstrate ability to independently maintain and monitor a kitchen environment - Must be able to understand and follow District food service policies, procedures, rules and regulations; - Must be able to orient and train food service staff; - Must be skilled in operation of commercial kitchen equipment; - Requires the ability to read and understand written directions and recipes and to calculate weights and measurements; - Must be able to learn, understand and apply safety and sanitation regulations; - Must be able to reconcile daily money transactions and keep records. - Establish and maintain cooperative relationships with those contacted during the course of work. - Operate a computer EDUCATION AND EXPERIENCE: - High school diploma or equivalent. Experience or course work in meal planning, nutrition, sanitation, business administration, cafeteria management or related field plus three years experience as an institutional cook or manager. PHYSICAL ABILITIES: - Requires general arm, hand, leg and body coordination to use standard large kitchen equipment. Working environment requires physical ability to stand for extended periods of time, stoop and infrequently lift objects up to 50 pounds. Requires the ability to handle hot material and work in an environment dominated by wide temperature extremes. Requires sufficient hand coordination to use kitchen utensils and equipment and move and position hot materials. Physical Abilities: • Stand for Extended Periods of Time • Frequent pushing, pulling, twisting at the waist • Neck flexion and rotation • Reaching above and below the shoulders • Occasional bending, kneeling, squatting, and stooping • Frequent lifting/pushing/pulling/carrying of objects from 25-50 lbs • Ability to handle hot material/temperature extremes • Hand Coordination to use utensils and equipment • Hear, speak, write, and read in English • Perform mathematical calculations from memory or utilizing calculation device • Repetitive finger manipulation doing data entry and/or swiping meal cards</p> <p>This summer school position is currently open to internal candidates only.
